The Pastéis de Belém bakery — The monks’ recipe, locked away in one room
Next door to the monastery there is a bakery that sells warm little tarts filled with egg custard, the pastéis de nata. Their story starts with the monks. Monasteries used enormous amounts of egg white to starch their clothes, which left them with mountains of leftover yolks. Rather than throw them away, they made sweets out of them. That is why so many Portuguese puddings are yellow and taste of custard. In 1834 the monasteries of Portugal were closed, and the recipe was sold to a shop next door, which opened in 1837 and has been working ever since. The recipe has never been printed in a cookery book. The pastry is rolled in a locked room called the Oficina do Segredo, the “workshop of the secret”, and only a handful of people know the whole of it. The tarts come out of the oven a little burnt on top, and that is on purpose: the very hot fire caramelises the sugar and gives them the dark blisters everyone looks for.
