The Torvehallerne markets — A square lost its market and then got it back again
For a long time this square was where Copenhagen bought its vegetables. The carts arrived before dawn, the stalls were wooden, and the square was called simply the Vegetable Market. In 1958 the whole trade was moved out to a bigger site on the edge of town, and the square became a car park. It stayed a car park for more than fifty years. In 2011 two halls of glass and steel opened on the same ground, with about sixty stalls: fish, cheese, bread, spices, coffee, flowers, and a great deal of smørrebrød. Smørrebrød is the Danish open sandwich, a slice of dense dark rye bread with something built carefully on top, and it comes with rules. You eat it with a knife and fork, and if you are having several, herring goes first, then fish, then meat, and cheese last. Getting the order wrong is not illegal. It is simply noticed.
